I have brilliant friends. One of my brilliant friends put on her first cupcake smackdown this month, and I was lucky to be a part of it. It was so much fun!!
She invited a plethora of women, each of whom were to bring 24 of their own cupcake creations to share. I think 13 women showed up, but it was plenty, I assure you!
Four to a tray, we sat around tasting each cupcake, and then, voted on which was the most original flavor, best frosting, best all around, and best decorated. There were some really amazing cupcakes!
I made a lemon meringue cupcake and won "most original flavor." I just used my lemon meringue pie filling and put it in a delicious white cupcake with a light fluffly frosting. I think it turned out nice and I got lots of compliments so I think others enjoyed them too.

Off in some corner was a table of healthy snacks to cleanse the palet... not sure if it was touched, hahaha, but a nice thought.
