Today I had the most amazing, BIG salad for lunch.
It had:
- romaine lettuce, iceberg lettuce, and spinach as the base
- cut up tomatoes
- sunflower seeds
- green peppers
- raw zucchini
- carrots
- broccoli
and
- extra virgin olive oil with balsalmic (sp?) vinegar as a dressing.
It was really really good! Did you know that raw zucchini and carrots, when eaten together, have an almost nutty flavor?? Who'd have thought?
Anyway, even almost 2 hours later, I feel like this...

This brings up a good point, and reinforces the saying...
"EVERYTHING IN MODERATION!!"
Yes, even vegetables!! Vegetables are good for you, and better than having a hamburger with fries, but you don't want to eat so much as to feel like a blimp in the Macy's Thankgiving Day parade.
